Menu Planning for the week of 2/21/10

This past week’s meals were amazing!   Especially the orange honey glazed chicken….that whole meal was definitely stand out.   I REALLY enjoyed the spinach pasta dish also, but I really love baked pasta dishes.  For some reason my family aren’t as big of lovers of them (unless it’s stuffed shells or lasagna), but I LOVE a baked pasta 🙂   This week is shaping up to be a relatively slow week overall, without a lot of “extras”…..which is a big “WHEW” in my book….   Of course I say that not knowing exactly what the Lord has planned for my week 🙂

 

Here’s what our menu will look like (and no carry-over meals! 🙂 )

 

Sunday, 2/21/10

  • Chicken tacos
  • Black beans
  • Mexi-salad (a green salad with corn, pepper, cilantro, tomato, and maybe a few more black beans tossed in and a spicy citrus vinaigrette)

 

Monday 2/22/10

  • Turkey cutlets with apples
  • Brown rice pilaf
  • Either butternut squash or baked sweet potatoes
  • Beet greens or collard greens (if I can get them at farmer’s market—yes, I’m typing this before the farmer’s market 🙂 )
  • Fruit salad with yogurt dressing

 

Tuesday, 2/23/10

  • Oven-fried mustard chicken
  • Garlic mashed potatoes
  • Oven roasted cauliflower
  • Oven roasted beets & turnips (providing I can get the turnips at farmer’s market)
  • Green salad

 

Wednesday, 2/24/10

  • DINNER AT CHURCH FOR AWANA GRAND PRIX 🙂   YAY!!!!!!! 🙂

 

Thursday, 2/25/10

  • Easy Creamy Tomato Pasta
  • Spinach salad
  • Baby carrots
  • Whole wheat herbed French bread

 

Friday, 2/26/10

  • Apricot glazed fish filets
  • Quinoa pilaf with veggies
  • Baby bok choy
  • Oven roasted acorn squash
  • Green salad
  • Either homemade cupcakes or cheesecake bars for dessert

 

Saturday, 2/27/10

  • Layered taco casserole
  • Green salad
  • Steamed broccoli
