Mexi-salad

Tonight I made a beautiful salad to go with our chicken tacos and black beans (which were delicious, and since I really want to replicate them again, I’ll post those next :)).   The salad could also be used as a salsa, if you felt so inclined 🙂

Mexi-Salad

  • 1 medium onion, diced
  • 10 oz. frozen corn, thawed
  • 1/4 red bell pepper, diced
  • 1/4 cup chopped cilantro
  • 1/8 jalapeno pepper, deseeded & finely diced
  • 1 medium tomato, diced
  • 1 avocado, diced
  • juice from one lemon
  • salt & pepper to taste
  • 1 clove garlic,finely minced

Combine all ingredients in bowl and let stand for at least an hour before serving.   The longer the better though.   This can be used as a salad or a salsa.
