Spiced Cranberry Orange Relish

1/2 cup water
1 stick cinnamon
1/2 teaspoon ground cloves
1 Tablespoon minced ginger
1/2 cup honey
1 cup orange juice
1 orange, all white membranes and pith cut away, and diced
1 lb. bag fresh (or frozen, thawed) cranberries

In a medium saucepan combine water, cinnamon stick, cloves, ginger and
honey. Bring to boil and let simmer for 5 minutes. Add orange juice,
orange and cranberries. Let simmer over medium low heat for 20-25
minutes or until it is thickened and jelly like. While it is simmering,
you will want to stir it often to prevent it from burning.

Store in refrigerator and refrigerate for several hours before serving (needs
to completely cool). Serve either cold or room temperature.
