I started making these for the kids a few weeks ago. They are pretty darned amazing, and they have MUCH less sugar than the regular popsicles and are much better for you. This is an original recipe, so if you use it or pass it along please give credit where credit is due….I do work hard on creating, testing, and perfecting my recipes, and while I do love sharing them, I do appreciate when my name is passed along with the recipe.
Strawberry Lemonade Yogurt Popsicles
- 1 cup sliced strawberries (can be fresh or frozen)
- 1 cup simple syrup (dissolve 3/4 cup sugar in 3/4 cup water over medium heat)
- 1 cup fresh lemon juice
- 2 cups plain yogurt (the higher the fat content, the creamier your popsicles will be)
Prepare simple syrup and let it cool. Add lemon juice and whisk in yogurt. In popsicle molds (or small paper cups that you will cover with plastic wrap and poke a popsicle stick in and freeze) place 4-6 strawberry slices (filling the mold about 1/3 full of strawberries) and then pour the yogurt mixture over filling the cups of the molds to the fill level line, then put sticks on top. Carefully transfer to freezer and freeze for at least 8 hours. Enjoy!
