A special, but very easy dessert

Do you have any beautiful, special occasion desserts that look like you spent a lot of time, but are actually very quick and easy to put together?   I have a couple, and this weekend, I found a new one.    A friend of mine recommended this tart recipe  to me a couple of weeks ago because it is strawberry season.  The way she described it was “you mix up the filling (the lemon curd and cream cheese) and put it into whatever crust you want, and then top it with fresh strawberries”…..it really IS that easy!  If you don’t have a favorite pastry crust, you can use the one listed on the original recipe.   Because I was also making mini versions of this, I used regular pie crust that I had pre-baked.   I made a triple recipe of the filling and it filled 48 mini tartlets and a standard 9 (?) inch tart shell and I still had some of the filling left (a little more than 2 cups)….the leftover filling is going to be used to fill strawberry cupcakes with a whipped cream frosting and a fresh strawberry on top.    Here are some pictures of the finished product.   I HIGHLY recommend this recipe!  (Linked above and also in the photos 🙂 )

    oh my gosh! that sounds so good, and I love the idea for cupcake filling, like really delicious strawberry lemon-aide cuppys! I love strawberries!
