Vanilla Granola

My friend MommaofMany has MANY fantastic recipes on her blog.  And I love trying them out when I’m needing inspiration.   One of the ones that my family LOVES and I have a hard time keeping in the house and my honey and middle daughter fight over.   I have adapted her original recipe… get the original recipe click here .   This is how I make it 🙂

Vanilla Granola

  • 5 cups rolled oats
  • 1/2 cup brown sugar
  • 1/4 cup ground flax seed
  • 1/4 cup toasted wheat germ
  • 1/4 cup chopped almonds
  • 1/4 tsp. salt
  • 1/8 tsp. cinnamon
  • 1/3 cup extra virgin olive oil
  • 1/4 cup honey
  • 4 tsp. vanilla extract

Preheat oven to 300.

In a large bowl, combine oats, brown sugar, ground flax seeds, wheat germ, almonds, salt and cinnamon.  In a small saucepan combine honey and oil.  Cook over low heat until it is hot and very fluid.  Add vanilla, it will get very bubbly and foam a bit.  Pour over oat mixture and mix with a wooden spoon until oats are evenly coated.

Pour into large baking sheet and bake for 30 minutes, stirring every 10 minutes.  Leave on counter uncovered until completely cooled.  Store in airtight container.
