Orange Soy Glazed Chicken

Last week I made this recipe to take to a family in our church that has a new baby.  My H (our 12 year old daughter) tasted it and said “Mom can we have this tomorrow night too?”   D (my hubby) told her, “no we’ll have it next week again though” 🙂    So needless to say this was a BIG HIT with the family!

Orange Soy Glazed Chicken

  • 6 oz. frozen orange juice concentrate (thawed)
  • 3/4 cup soy sauce
  • 1-2 tablespoons honey (or sugar) (to taste)
  • 1 teaspoon of asian chili garlic sauce (or you can use sambal oeleck and a clove of garlic)

I placed my chicken pieces in a ziplock bag, poured enough of the marinade over it so that once I squeezed all the air out, the marinade was coating all of the pieces. The rest of it, I set aside until I cooked. I marinated the chicken for a couple of hours, but you could definitely marinate the whole time you’re at work. I baked my chicken pieces, and while they were baking, I put the reserved marinade in a saucepan and reduced it by half to make it more glaze like. Then about 5 minutes before the chicken was done cooking I poured the glaze over the top. It had a sweet & sticky and SUPER TASTY glaze on it and was really good!
