Tried a new recipe last night, and it was AWESOME!!!!

Actually, we tried 2 new recipes, I will share both, but in separate posts to make searching easier in the future 🙂

A few weeks ago I was watching an episode of Emeril Green on the Green Planet network.   He was doing a menu for a woman that had some digestive problems.   Anyhow, one of the recipes that he did for her was quinoa with butternut squash.   I LOVE quinoa, and my family indulges my passion for this ancient grain, and they will eat it because I make it, but they hae never totally loved it like I do.   So when I saw this new method of flavoring it, and getting an extra veggie serving into the family, I thought I’d give it a try!   It was a success!!!!!   Here is a link to Emeril’s recipe, I didn’t look at the recipe before making it last night because I thought I remembered it.   Well, what I had forgotten was the spices!  Can’t wait to make it again to try it with the spices 🙂    If you don’t want the spice, here’s what I did, and it was DELICIOUS!!!!

Quinoa with Butternut Squash & Kale

Serves 8 (this is great for leftovers, or you can decrease the recipe)

  • 2 cups quinoa (rinse well to rinse off the bitter outer coating)
  • 4 cups chicken broth
  • 1 cup chopped kale
  • 2 cups butternut squash (I used a small 1-1 1/2# squash, peeled it and diced in 1/2″ cubes)
  • black pepper to taste

Bring chicken broth to a boil, add squash, kale & quinoa.  Bring back to a boil, reduce heat, cover and let lightly simmer for 20-25 minutes or until all of the liquid is absorbed.   Toss lightly with a fork before serving.
