Orange Honey Glazed Chicken

Another part of last night’s dinner was the orange honey glazed chicken.   It was SOOOOO good!   Probably one of the best chicken dishes I’ve made….definitely in the top 10 chicken dishes.

Orange Honey Glazed Chicken

Serves 6

  • 1/4 cup honey
  • 2 tablespoons frozen orange juice concentrate
  • 2 cloves garlic, pressed
  • 1/4 teaspoon red pepper flakes
  • 1 1/2 tablespoons olive oil
  • 6 boneless, skinless chicken breast halves
  • salt & pepper
  • green onions & cilantro (or parsley or basil, if you just can’t stand cilantro)

Mix together honey, orange juice concentrate, garlic and red pepper flakes.  Reserve 1/2, place the other half in a ziplock bag with the chicken breasts and squish all of the air out and place in refrigerator to marinate for at least 2-3 hours (can go as long as 8 hours if you need to)

Preheat a large skillet over medium high heat.  Remove chicken from marinade and season both sides of each chicken breast with salt & pepper.  Add oil to skillet then place chicken breasts in to brown.  Reduce heat to medium.   When first side is nicely browned, turn chicken breasts and let brown,  add marinade to pan, and pour the reserved glaze evenly over each chicken  breast, cover pan and let cook for approx 5 minutes or until the chicken breasts reach an internal temperature of 160 degrees in the thickest portion.   Remove from heat and garnish with chopped green onions and chopped cilantro (these really do MAKE the dish, don’t skip this step….it really adds a nice freshness to the dish).

I served this with quinoa with butternut squash (last recipe that I posted here), and a big green salad.
