Ok, I have made my dressing/stuffing from scratch for years and years and years now, and when I was growing up that was always my thing to help with for our holiday meals. I have morphed my momma’s recipe over the years to include some of the things that I enjoy in a stuffing/dressing (different types of breads, apples, less butter, etc). So I am VERY familiar with making stuffing/dressing. But in the past several years since we’ve started watching the Food Network I’ve seen that many people (most people?) put eggs in their stuffing/dressing. To me, that is just icky! BUT for those of you that do put the egg in, what purpose does it serve? Seriously, I want to know what does it do in the stuffing/dressing? To me, knowing the properties of eggs, I’m assuming it holds the stuffing/dressing together, kind of like bread pudding? Is that what it does?

I’m no help to you, I’m afraid! This will probably appall you but I use Stove Top stuffing mix. We all like it better than homemade! Eggs in stuffing doesn’t sound good to me.
Mari, that does not appall me at all! I LOVE Stove Top Stuffing, and have used it in the past, but making it from scratch is nostalgic for me, and it takes me back to helping my mom with holiday meals. Since my mom isn’t in my life anymore stuff like this helps me to feel closer to her.
Yes, L, the egg is a “binder”. I have made homemade stuffing for over 50 years using Mom’s recipe. Finely chopped celery, onions, peppers, melted butter..all mixed with old dry bread crumbs..and beaten eggs to hold it all together.
I have to admit that I do use Stove Top on occassion..and it sure is a heck of a lot easier…especially since cooking for two is such a challenge. I still make the “big” recipes of the old favorites and just share with Ang and her family.

I don’t really make the kind of dressing like my mom used to make; the recipe I’m using now is a squash dressing but I looked it up and it does have eggs in it! I like the stove top though if it’s a small crowd but that’s not this year.
