Last night we went to some friends’ house for dinner, and they asked us to bring a salad of some type….any kind of salad. I made it simple and took a simple green salad and a couple of different types of homemade salad dressing. I made the ranch and italian dressings that I posted a few weeks back, and while looking through my computer recipe files for a recipe for someone else, I found a recipe that I had never tried before. It was for Strawberry Vinaigrette…..I thought “Oooooh, yum!”
So, I made it and the original version was very good, but it was a bit “flat”, so I added a little bit of EVOO to give it a little oomph, it was just what the recipe needed!
SO, here’s the recipe, and unfortunately I don’t know the original source, this is a recipe that I’ve had in my computer recipe files for years….and apparently it was from our early days on the internet (1994-95ish) before I started keeping my sources for recipes. If this is your original recipe, or you know who’s it is, I’d love to give credit where credit is due…..
Strawberry Vinaigrette

1 cup strawberries (fresh or frozen, thawed)
2 Tbsp. red wine vinegar (I used pomegranate vinegar and it was AWESOME!!!!!)
1 Tbsp. honey
salt and pepper to taste
(my addition) 2-3 Tbsp. extra virgin olive oil
In blender container, combine berries, vinegar, honey and salt and pepper and puree until it is completely liquid. Taste and check seasoning, adjust seasoning if necessary, and if you think it needs it, turn blender back on and SLOWLY stream in evoo a tablespoon at a time until you get the flavor that you want.

This sounds really good! I’m picturing it on a salad with strawberries and sliced almonds. Mmmm!
