In an attempt to A) save money, and B) use less pre-made (unhealthy, chemical-ridden) items I am trying to find suitable homemade replacements I decided to try my friend Momma of Many’s homemade italian dressing and in “true Lori fashion” I couldn’t just follow the recipe 🙂 I tried, I REALLY did! But I was out of fresh garlic, and did have some shallots, SO, please look at Momma’s blog for the original recipe, but here is what I did 🙂 (I did only make a 1/2 recipe because I wanted to try it, but also, we don’t use a ton of italian salad dressing).
Italian Salad Dressing (1/2 recipe)
6 Tbsp. olive oil (or healty oil of your choice)
2 Tbsp. organic apple cider vinegar
1 Tbsp. water
1 tsp. dried garlic granules
1 tsp. sugar
1/2 tsp. salt
1/4 tsp. freshly ground black pepper
1/2 tsp. finely grated parmesan cheese
2 tsp. finely chopped shallot (I actually pressed a piece of the shallot through my garlic press and it worked FANTASTICALLY)
Put all ingredients EXCEPT oil in blender and blend on medium speed until well blended. With blender still running on medium speed, slowly (REALLY SLOWLY) drizzle in oil through top and let continue blending until you have a good thick emulsion.
This dressing was fantastic right out of the blender without having gone into the refrigerator…..can’t wait to try it later!
