Today’s recipe of the day using the produce from our weekly CSA basket is using kiwis. We LOVE kiwis! Not only are they SUPER tasty, they are also fun 🙂
Today’s recipe is courtesy of Familyfun.com I originally saw this recipe in the Family Fun magazine, probably about 6 years ago and have made it several times now and it is something my little family really enjoys.
Your kids will get a bang out of baking this lime-flavored pie with you.pie Let them help make the crust. All they have to do is pop some crackers into a zip-top bag and crush them with a rolling pin.
They’ll have fun, all right. And you’ll have this delicious pie for dessert.
Ingredients
1 cup graham cracker crumbs
3 tbsp. butter, melted
1 14-oz. can sweetened condensed milk
4 egg yolks
1/3 cup lime juice
Thin chocolate cookie wafers
1 kiwi, peeled and sliced
Directions
Heat the oven to 350 degrees. Mix the graham cracker crumbs and butter in a bowl. Firmly press the crumbs against the bottom and sides of a 9-inch pie pan. Bake for 5 minutes.
In another bowl, stir the sweetened condensed milk, egg yolks and lime juice until well mixed. Pour the mixture into the crust and bake for 15 minutes or until an inserted knife comes out clean.
Once the pie cools, push cookie wafers into the filling along the edge. Top with kiwi slices arranged to resemble a shamrock. Serves 8.
