Last night I tried a new recipe from another blog, and it was Soooo good! I found it at Sylvia’s blog….

Sylvia, this was SOOOOOOO good! I didn’t get it started in time to do in the crockpot, so I slow cooked it in the oven…..I bet that the flavors would have been even better had I done it in the crockpot! I definitely will next time.
I didn’t have any fresh basil (very much out of season around here), but I did have some fresh sage and rosemary, so I used about 1/4 cup fresh sage (cut into small ribbons), and about 2 tsp. of fresh rosemary and it was SOOOOOO good! I know it would be even better with the basil and oregano.

this is a favorite of mine. Sylvia has 2 recipes I think for crockpot ckn and didn’t check which one you did- but sometimes I JUST plop in frozen ckn thighs (I prefer to the breasts), a can of the lite coconut milk, a can of tomatoes…and let ‘er rip. I do high for about an hour, break them apart, then high for another hour and then turn it down. I did some research on slow cooking from frozen ckn and as long as you cook it long enough it is fine. DH only like thyme- so that is typically what I add if anything. Then roast some potatoes in the oven and use the sauce on top.
