Thought I’d share some photos from baking day….

Banana Walnut Oatbran Muffins

Well, I forgot to take photos of anything else on Monday…..but I will share a recipe for you 🙂

Easy Peanut Butter Cookies

1 cup natural peanut butter (smooth or chunky)

1 organic free range egg

1 cup sucanat or other natural dry sweetener (I’ve tried honey and agave and such with these, and they just don’t work)

1 tsp. baking powder

OPTIONAL 1/2 cup natural grain sweetened chocolate chips

Preheat oven to 350 degrees.    In a medium mixing bowl, combine ingredients.   I like to cream everything together using an electric mixer.      Drop by tablespoonful onto baking stone or cookie sheet and flatten with fork in a criss cross pattern.   Bake in a preheated oven for 8-10 minutes, until cookies are just set.

Let cookies rest for 5 minutes on hot baking sheet before moving to cooling racks to cool completely.

Enjoy with an ice cold glass of your favorite milk beverage!

    Do you use any flour in this recipe? Some peanut butter cookies sound really good!


    Hi Momma, no, these cookies do not have any flour in them. They are super simple and my kiddos love making them! Even 6 year old r can make them by herself.
