A summertime salad….

A Taste of Summer Salad

An original recipe by Lori4squaremom

For dressing:

2 tbsp. chopped flat leaf parsley (fresh)

1 tbsp. chopped cilantro leaves (fresh)

1 tbsp. chopped mint leaves (fresh)

1 tsp. lemon zest (preferably from an organic lemon)

1 tsp. stone ground mustard

juice from one lemon

3 tbsp. extra virgin olive oil

1/2 tsp. salt

1/4 tsp. freshly ground black pepper

For salad:

1 large or 2 small mediterranean cucumbers, cut into cubes (approx. 1 1/2 cups)

1/2 small red onion, diced

2 large ripe tomatoes, large dice

1 medium green bell pepper, large dice

In  a large bowl, combine chopped herbs, mustard, salt, pepper, lemon zest, and lemon juice.  Slowly whisk in olive oil (I premeasure it and put it into a squeeze bottle that way the stream is regulated, and I don’t accidentally pour more calories into my bowl than I want :)) until dressing is beginning to thicken up a bit and is well combined.    Add chopped vegetables and toss lightly with very clean hands (or you can use a spoon, I just prefer my hands for this type of a tossing :)).

Place salad in refrigerator and let rest for at least 2 hours to let flavors meld.  Will be better the next day.

    This salad sound and looks fantastic! I can’t wait to try it out. One thing I love about summer is all the fresh fruits and veggies that are available.
