My Favorite Ingredient Friday entry for this week is my absolute favorite sloppy joe recipe. It is from the Once a Month Cooking Cookbook by Lagerborg and Wilson. I have made some adaptations over the years to help stretch it and to help it suit our needs and budget better. So if you have the book, this recipe is not quite identical…..but it’s close enough that you won’t notice too much 🙂

Joes To Go
1 pound lean ground beef (3 1/2 cups browned)
1 cup cooked lentils
3/4 cup finely chopped onion (1/2 cup sauteed)
1 1/2 teaspoons garlic powder
1/8 teaspoon pepper
1/2 cup ketchup
1/4 cup brown sugar (I use sucanat or rapadura)
1 tablespoon white vinegar (I prefer red wine vinegar, but I honestly use whatever vinegar I have handy at the moment)
1 tablespoon prepared mustard
1 15 oz. can tomato sauce
10 hamburger buns
In a large skillet, cook and stir ground beef and onion until beef is brown; drain. Add remaining ingredients, bring to a boil; reduce heat. Simmer uncovered 10 minutes, stirring occasionally.
Serve on buns
My husband loves sloppy joes, but the jarred stuff gives him wicked heartburn. I’ll have to try this recipe. The lentils are an interesting addition.
