Favorite Ingredient Friday….St. Patrick's Day Edition

This week Overwhelmed is hosting a St. Patrick’s Day edition of Favorite Ingredient Friday!     I am Irish, and grew up with corned beef and cabbage (which I understand isn’t even traditionally Irish????) every St. Patrick’s Day.   This is a tradition that D and I have continued every year since we’ve been married.  We’ve never missed a St. Patrick’s Day with this favorite meal 🙂

While this isn’t at all Irish, it is green (ish) and does go great with the corned beef and cabbage and potatoes and carrots that I serve each year.   My kids love when I make this for dessert once a year 🙂    This recipe is from Family Fun Magazine.  My kids enjoy making it with me, and actually, I won’t let them know this because I like making it, but they could actually make this one themselves 🙂

Kiwi Lime Pie

Your kids will get a bang out of baking this lime-flavored pie with you.pie Let them help make the crust. All they have to do is pop some crackers into a zip-top bag and crush them with a rolling pin.

They’ll have fun, all right. And you’ll have this delicious pie for dessert.

Ingredients

1 cup graham cracker crumbs
3 tbsp. butter, melted
1 14-oz. can sweetened condensed milk
4 egg yolks
1/3 cup lime juice
Thin chocolate cookie wafers
1 kiwi, peeled and sliced

Directions

Heat the oven to 350 degrees. Mix the graham cracker crumbs and butter in a bowl. Firmly press the crumbs against the bottom and sides of a 9-inch pie pan. Bake for 5 minutes.

In another bowl, stir the sweetened condensed milk, egg yolks and lime juice until well mixed. Pour the mixture into the crust and bake for 15 minutes or until an inserted knife comes out clean.

Once the pie cools, push cookie wafers into the filling along the edge. Top with kiwi slices arranged to resemble a shamrock. Serves 8.
